A new book, The Noodle Narratives, written by three US anthropologists(人类学家) analyzes the sharp rise of instant noodles, from its birth in postwar Japan to its sales of over 100 billion in one year worldwide. And they make their arguments: instant noodles do good to the world by relieving the hunger of millions of people around the world. These noodles, they write, help the low-income people to support themselves when the situation gets tough.

  “They’re cheap and tasty,” one of the writers says. “And they can be changed to everyone’s cultural taste.” In Thailand, instant noodle is made more delicious by adding lemongrass(柠檬草) and cilantro(香菜). Mexicans can buy noodle soup cups with shrimp, lime and habanero (墨西哥辣椒), among other flavors. In Japan, the birthplace of instant noodles, the demand for novel noodle products is so big that producers introduce 600 new flavors a year.

  While not nutritious, instant noodles are a hunger killer for low-income populations. The fat contained in the noodles keeps you feeling full longer. Once you add water, instant noodles become soup that provides longer feeling of fullness than noodles alone. And that helps explain why the noodles have become main products of the hungry world.

  But why can’t the urban poor eat something more nutritious than this highly processed food? The reality is that in any cities, the poor lack alternatives that are more healthful than instant noodles.

  One way to help the poor who rely on instant noodles, they point out, is to make the noodles more nutritious: they could be lower-fat and higher-fiber, with vitamins added, though that will lead to a slightly higher price.
